You got chocolate on my peanut butter. You got peanut butter in my chocolate. Remember that commercial for Reese’s Peanut Butter Cups? If you like chocolate and peanut butter together, and you enjoy cheesecake, then you’ll love this quick & easy recipe for peanut butter cheesecake bites.

Traditional cheesecake takes a long time to make; you have to make the crust, then make the cheesecake, and you have to refrigerate it overnight before you can serve it. Peanut butter cheesecake bites can be ready to serve in only two hours instead of two days.

As an extra bonus, these bite sized treats are made with organic ingredients and they’re keto friendly.

Peanut butter cheesecake bites. are delicious bite sizes treats made from all-natural peanut butter, organic cream cheese and dark chocolate.  Here’s what you’ll need to make this recipe.

1/2 Cup of Natural Peanut Butter

4oz of Room Temperature Organic Cream Cheese

4oz of Room Temperature Organic Unsalted Butter

¼ Cup of Powdered Monk Fruit Sweetener

1 Teaspoon of Vanilla Extract

1/2 Cup of Chopped Dark Chocolate 

Put a sheet of parchment paper onto a cookie sheet.

In a medium sized bowl, add the peanut butter, then add in the room temperature cream cheese., room temperature butter, monk fruit sweetener, and vanilla, and mix it all together until all of the ingredients are blended evenly and smooth.

Put it in the freezer for 30 minutes to let the batter set.

Crush up the chocolate; (we used a plastic bag and a meat mallet) and pour the chocolate onto a plate. Use a medium ice cream scoop and roll the batter onto the crushed chocolate.

Place the cheesecake bites onto the cookie sheet with parchment paper and then into the refrigerator for two hours and you’re ready to serve.

You can store these in an airtight container for up to a week in the refrigerator.
