Parmesan potato stacks with cheddar cheese dipping sauce. They can be served as a side dish or an appetizer. Sliced Yukon gold potatoes seasoned with melted butter and Parmesan Reggiano cheese and baked in the oven. Served with a cheese sauce made from butter, heavy cream, seasonings, and freshly grated cheddar cheese.

Here is what you’ll need to make this savory treat.

For the Potato Stacks

4 Yukon Gold Potatoes

3 Tablespoons of Melted Butter

3 Tablespoons of Freshly Grated Parmesan Reggiano Cheese

½ Teaspoon each of Garlic Powder, Onion Powder, Ground Thyme, Paprika, Salt and Pepper.

1 Teaspoon of Fresh Thyme

For the Cheddar Cheese Dipping Sauce

4 oz of Unsalted Butter

1 Teaspoon of Flour

1 ½ Cup of Milk or Heavy Cream

Half of the Garlic Powder, Onion Powder, Ground Thyme, Paprika, Salt & Pepper,

A Dash of Hot Sauce 4 oz of Shredded Cheddar Cheese

Peel the potatoes and place them in a bowl of cold water. This is to keep the potatoes from turning brown. Slice the potatoes into thin slices using a mandolin slicer. One word of caution; the mandolin is considered by many chefs to be the most dangerous tool in the kitchen; you have to pay close attention when you’re using it; you can slice your finger if you’re not careful.

Place the sliced potatoes in a large bowl. Add the melted butter, half parmesan cheese, half of the seasoning mix (garlic powder, onion powder, thyme, paprika, salt and pepper,) and fresh thyme, and toss to ensure all of the potatoes are covered.

Use your hands to form the potatoes into layers and put them into a buttered non-stick muffin pan. Some of the seasoned butter hardened in the bowl, so, add any hardened seasoned butter.

Pre-heat the oven to 375 degrees and then bake in the oven for about ¬one hour. Just like baking cookies, it might take a time or two of making these to get the color right.

While the potatoes are baking, let’s make the cheese sauce. In a small pot, add in the butter and keep the heat on low. Add in the flour and make a roux. Use a whisk to mix the heavy cream into the roux. If it is too thick, you can thin it out by adding milk or a few ounces of water, Add the seasonings and then the shredded cheese. Whisk everything together on low heat until you reach your desired level of thickness.

Remove the potatoes from the oven and allow them to rest in the muffin pan for a few minutes.
