Keto Sausage & Cheese Omelet Muffins

Only 4 Grams of Carbs Each! Creamy & Delicious.

Ingredients:

1 Jumbo Muffin Pan

8 pasture raised organic eggs

1 teaspoon each salt & pepper

1/2 teaspoon of turmeric

8oz of room temperature cream cheese

3oz each grated parmesan, white cheddar, and mozzarella cheese

4oz chopped white mushrooms

1 lb of ground pork

1 small onion chopped 1 small bag of baby spinach

Cooking Instructions

In a pan with butter and olive oil, sauté the onions for five minutes, then add in the mushrooms & cook for five minutes and set the mix onto a plate.

Brown the ground pork, add in the rest of the salt, pepper, and turmeric, and add a teaspoon of fennel. Fennel is what gives us the flavor in sweet sausage.

Add in the spinach to the pan of meat and stir it in. The spinach will begin to wilt. Then add the mushrooms and onions back into the pan with the meat and spinach and stir it together.

In the large bowl, crack 8 eggs. For the best health benefit, use organic pasture raised eggs. Add the salt, pepper, turmeric, the grated cheeses, and cream cheese, and give it a nice stir.  

Add in the sausage, onions, mushrooms, spinach mixture to the bowl and fold into the eggs.

Spray a non-stick jumbo muffin pan with non-stick spray and add the egg mixture into each of the slots.

Bake in the oven for 20 minutes.

Let them cool and you’re ready to serve. Each egg muffin is only 4g of carbs. Perfect for the keto diet
